Base:
200g di biscotti digestive
100g di burro
Un pizz di sale
Per la crema:
250g di mascarpone (o Filadelfia)
100 g di zucchero a velo (o zucchero normale sottile)
200g di polpa di mango maturo
175 ml di panna fresca montata
125ml yogurt intero bianco
15 g di gelatina
Per la copertura:
400gr di polpa di mango matura + 30ml di spremuta arancia( o 430 polpa di mango senza spremuta)
9 g di gelatina
Per la decorazione:
panna montata(io non l ho messa) fragole, more, lamponi o mirtilli.. il frutto che preferite.
Per preparare la cheesecake al mango, cominciare con la base:
Sbriciolare i biscotti digestive nel frullatore fino a ottenere una polverina fine e trasferirla in una ciotola. Aggiungere e il burro fuso e amalgamare il tutto.
Disporre il composto in una tortiera imburrata e rivestita con la carta da forno e schiacciarlo bene sul fondo con le mani. Lasciar riposare la base in frigorifero per circa un’ora o nel congelatore per un quarto d’ora.
Per preparare la crema:
Sbucciare e tagliare a pezzetti i manghi. Montare la panna(lasciandone circa 30ml da parte)unire alla panna montata al mascarpone a velocità lenta, per renderlo liscio e cremoso, poi aggiungere lo yogurt e la purea di mango con lo zucchero a velo e mescolare.
Ammollare la gelatina in acqua fredda x 10 minuti; poi, strizzarla bene, farla sciogliere nella panna molto calda messa da parte e quindi lasciarla intiepidire.
Unire alla crema di mascarpone il composto di gelatina intiepidita mescolando molto bene senza smontare il tutto.
Versare la crema sopra la base, riporre di nuovo la torta in frigorifero e lasciarvela per almeno 3 ore.
Per preparare la copertura
Ammollare la gelatina in acqua fredda e strizzarla bene.
Sbucciare i manghi e tagliarli a pezzettini e insieme al succo di arancia Frullarli nel mixer fino a ottenere una polpa sottile e cremosa.
Poi, far sobbollire il composto di mango in un pentolino e aggiungere la gelatina mescolando con una frusta molto bene;
Lasciar raffreddare il composto.
Versare la gelatina intiepidita nel composto di mango e mischiare il tutto molto bene.
Infine versare il composto sulla torta

100 g of powdered sugar (or thin plain sugar)
200g of ripe mango pulp
175 ml of fresh whipped cream
125ml whole white yogurt
15 g of gelatin
For coverage:
400gr of ripe mango pulp + 30ml of orange juice (or 430 mango pulp without juice)
9 g of gelatin
For the decoration:
whipped cream (I didn’t put it) strawberries, blackberries, raspberries or blueberries .. the fruit you prefer.
To make mango cheesecake, start with the base:
Crumble the digestive biscuits in the blender until a fine powder is obtained and transfer it to a bowl. Add the melted butter and mix everything together.
Arrange the mixture in a greased pan lined with baking paper and crush it well on the bottom with your hands. Leave the base to rest in the refrigerator for about an hour or in the freezer for a quarter of an hour.
To prepare the cream:
Peel and chop the mangoes. Whip the cream (leaving about 30ml aside) add the whipped mascarpone cream at a slow speed to make it smooth and creamy, then add the yogurt and mango puree with the icing sugar and mix.
Soak the gelatine in cold water for 10 minutes; then, squeeze it well, melt it in the very hot cream set aside and then let it cool.
Add the warmed gelatin mixture to the mascarpone cream, mixing very well without taking everything apart.
Pour the cream over the base, put the cake back in the refrigerator and leave it there for at least 3 hours.
To prepare the cover
Soak the gelatine in cold water and squeeze it well.
Peel the mangoes and cut them into small pieces and together with the orange juice Blend them in the mixer until you get a thin and creamy pulp.
Then, simmer the mango mixture in a saucepan and add the gelatin, stirring very well with a whisk;
Allow the mixture to cool.
Pour the warmed gelatine into the mango mixture and mix everything very well.
Finally pour the mixture on the cake
