CHEESECAKE ALLO YOGURT E FRAGOLE 🍓
INGREDIENTI (tortiera da 22 cm)
Per la base di biscotti
200 g di biscotti tipo Digestive
90 g di burro
Per la crema allo yogurt
420 g di yogurt naturale o greco alla fragola
90 g di zucchero a velo
300 ml di panna fresca da montare
15g di gelatina in fogli
Per la gelatina di fragole
150 g di fragole
50 g di zucchero
4 g di gelatina in fogli
E inoltre:
250 g di fragole per l’interno e la decorazione
Preparazione della Torta fredda allo yogurt e fragole
Tirate lo yogurt fuori dal frigo 1 oretta prima, perchè non deve essere troppo freddo. Fate sciogliere il burro a fuoco moderato.
Mettete i biscotti nel mixer e frullateli. Aggiungete il burro fuso e mescolate bene.
Prendete una tortiera a cerniera da 22 cm o un cerchio apribile e appoggiatela al centro del vassoio da portata.
Mettete i biscotti frullati con il burro fuso e schiacciate bene bene, utilizzando il dorso di un cucchiaio, in modo che venga una base ben livellata.
Mettete in frigo per ca. 15 minuti, in modo che si rassodi il tutto.
Prepariamo la crema allo yogurt
Mettete in ammollo i fogli di gelatina in acqua fredda per ca. 8 minuti (non oltre).
Montate la panna fresca senza aggiunta di nulla e riponetela in frigo. Strizzate i fogli di gelatina e metteteli a sciogliere a fuoco moderato insieme a 2 cucchiai di panna fresca, mescolando energicamente. In una ciotola capiente, versate lo yogurt ) e mischiatelo bene con lo zucchero a velo. Aggiungete qualche cucchiaio di yogurt alla gelatina (per stemperare), mischiate e versate il tutto nella ciotola dello yogurt. Aggiungete anche la panna e mischiate delicatamente finchè sarà tutto omogeneo
Composizione della torta
Lavate e tagliate a dadini le fragole e aggiungetele alla crema allo yogurt. Mescolate il tutto. Tenete 5 fragole intere per la decorazione.
Versate la crema allo yogurt e fragole sopra alla base e livellate bene. Mettete in frigo per 2 ore
Trascorsa le 2 ore , tagliate a fettine le fragole rimaste e posizionatele sulla superficie esterna della torta.
Preparazione della copertura di gelatina e fragole
Mettete la gelatina in fogli in ammollo in acqua fredda per 8 minuti. Mettete in un pentolino le fragole a pezzi e lo zucchero. Lasciate cucinare qualche minuto, finchè lo zucchero non sarà sciolto completamente e aggiungete la gelatina strizzata. Una volta sciolta, trasferite le fragole in un mixer e frullate il tutto. Aspettate che si raffreddi, poi versatela sulla superficie della torta. Rimettete la torta in frigo per altre 3 ore. Vi consiglio di farla il giorno prima, così avrà tutta la notte per rassodarsi in frigo.
Una volta pronta estraete la vostra Torta fredda allo yogurt e fragole delicatamente dalla tortiera apribile, avendo cura di passare con un coltellino affilato lungo i bordi, prima di sformare e servite.( io uso sempre i fogli di acetato xke sono comodissimi e uso la tortiera rotonda apribile)

INGREDIENTS (22 cm cake pan)

Preparation of the cold yogurt and strawberry cake
Take the yogurt out of the fridge 1 hour before, because it shouldn’t be too cold. Melt the butter over medium heat.
Put the biscuits in the mixer and blend them. Add the melted butter and mix well.
Take a 22cm hinged cake pan or an opening circle and place it in the center of the serving tray.
Put the blended biscuits with the melted butter and mash well, using the back of a spoon, so that a well-leveled base is created.
Refrigerate for approx. 15 minutes, so that everything becomes firm.
Let’s prepare the yogurt cream
Soak the gelatine leaves in cold water for approx. 8 minutes (no longer).
Whip the fresh cream without adding anything and place it in the fridge. Squeeze the gelatin sheets and put them to melt over moderate heat together with 2 tablespoons of fresh cream, stirring vigorously. In a large bowl, pour the yogurt) and mix it well with the icing sugar. Add a few tablespoons of yogurt to the jelly (to dilute), mix and pour everything into the bowl of yogurt. Also add the cream and mix gently until everything is homogeneous.
Composition of the cake
Wash and dice the strawberries and add them to the yogurt cream. Mix everything. Keep 5 whole strawberries for decoration.
Pour the yogurt and strawberry cream over the base and level well. Refrigerate for 2 hours
After 2 hours, cut the remaining strawberries into slices and place them on the outer surface of the cake.
Preparation of the jelly and strawberry coating
Put the gelatine sheets to soak in cold water for 8 minutes. Put the chopped strawberries and sugar in a saucepan. Let it cook for a few minutes, until the sugar has completely dissolved and add the squeezed gelatin. Once melted, transfer the strawberries to a blender and blend everything. Wait for it to cool, then pour it onto the surface of the cake. Put the cake back in the fridge for another 3 hours. I recommend you do it the day before, so it will have all night to firm up in the fridge.
