INGREDIENTI
240 g di farina di kamut (opp. 260 g di farina 00 o di tipo 1)
200 g di zucchero
100 g di mandorle pelate
2 uova
70 g di burro
mezza bacca di vaniglia
6 g di baking powder o lievito chimico per dolci
un pizzico di sale
PREPARAZIONE
Tostare le mandorle in forno caldo per alcuni minuti e lasciarle raffreddare.
Lavorare la farina con il burro fino ad ottenere delle briciole fini. Aggiungere il lievito, il sale, lo zucchero e i semi ricavati raschiando la bacca di vaniglia. Alla fine incorporare le uova fino ad ottenere un impasto simile alla pasta frolla.
A questo punto aggiungere anche le mandorle ormai fredde impastando a mano.
Formare due filoncini larghi 4-5 cm e alti 1 cm piuttosto distanziati sulla placca da forno.
Cuocere in forno a 180° per circa 30 minuti, fino a che non appaiono di colore marrone chiaro e ancora morbidi.
Togliere dal forno e tagliare dai filoncini delle fette di circa 1 cm. Capovolgere le fette in modo da mettere verso l’alto il lato interno e rimetterle in forno per qualche minuto con il grill acceso. Devono biscottarsi ma non bruciarsi e quindi controllare attentamente la cottura. Girare quindi le fette dall’altro lato e terminare la cottura in maniera uniforme.
Lasciare raffreddare sulla placca.
Questi biscotti si gustano preferibilmente intinti nel vino dolce.
Etruschi (or Cantucci) with kamut flour
INGREDIENTS
240 g whole kamut flour (or 260 g of plain flour)
200 g sugar
100 g of peeled almonds
2 eggs
70 g butter
half a vanilla pod
6 g baking powder
a pinch of salt
PREPARATION
Toast the almonds in a hot oven for a few minutes and let them cool.
Work the flour with the butter until you obtain fine crumbs. Add baking powder, salt, sugar and the seeds obtained by scraping the vanilla pod. At the end add the eggs until the dough gets to be similar to puff pastry.
Now add the almonds.
Form two loaves 4-5 cm wide and 1 cm tall somewhat spaced on baking sheet.
Bake at 180° for about 30 minutes, until they are light brown and still soft.
Remove from oven and cut from the loaves slices of approx. 1 cm. Put the cut part upwards and place them back in the oven for a few minutes with the grill turned on. They must get crisp and brown but they should not burn, so carefully control the cooking. Turn the slices on the other side and finish cooking evenly.
Let cool on the baking sheet.
These cookies are usually eaten dipped in sweet wine.

Belli questi biscotti, se roiscissi a sostituire le uova ne sarei felicissima
Potresti provare a sostituire la parte liquida (cioè le uova) con altrettanta panna. Ciao e grazie!
