Ingredienti
250 gr. Farina 0
250 gr. Farina 00
125 ml di Acqua Frizzante
125 ml di Acqua
25 gr. di Zucchero
20 gr. di Lievito
25 gr di Olio EVO
1 Cucchiaino e mezzo di Sale fino
Per la farcita
Passata di Pomodoro (meglio se fatta in casa)
1 Panetto di Mozzarella
Sale Q.B.
Origano Q.B.
Inoltre Carciofini sott’olio, Prosciutto cotto, salame piccante, Tonno, cipolla…. Tutto ciò che è di Vostro gradimento… Oppure anche solo tipo Margherita.
Preparazione
Mettete in una ciotola capiente i 2 tipi d’Acqua, il lievito sbriciolato e lo Zucchero… Impastate con la Frusta Elettrica o con la Planetaria per circa un paio di minuti a questo punto aggiungete le Farine, l’olio e il sale… Lavorate ancora per 3 Minuti.
Ora coprite la ciotola con un panno Umido e lasciate lievitare per circa 2 ore.
Indi tirate la pasta su una Teglia, coperta con Carta Forno e lasciate lievitare nel Forno spento con luce accesa per un altro paio di ore…
Sopra l’impasto lievitato stendete la passata di pomodoro salata… una bella polverata di origano e infornate in Forno preriscaldato a 200° per circa un 10-15 Minuti
… estraete la pizza dal Forno e metteteci sopra la Mozzarella tagliata a pezzettini piccolissimi e tutti gli altri ingredienti a Vostro piacere… Continuate la cottura per altri 10-15 Minuti.
P.S. Questo impasto si può anche fare il giorno prima e metterlo in una ciotola chiusa nel Frigorifero… Estraetela un ora prima di infornarla.
