This cold cous cous is easy to make and it takes less than 30 minutes to prepare. It’s a delicious summer dish which can be included in a picnic menu. Try it and let me know if you like it.

COLD COUS COUS
- 250 g cous cous
- 250 ml water
- 20 g butter
- 200 g tuna in olive oil
- some rocket leaves
- some caper berries
- 20 g pistachios
- extra vergin olive oil
- salt and black pepper
Pour water in a large saucepan. Add 1 tablespoon of oil and a generous pinch of salt and bring to boil.
Pour in the cous cous and remove from heat.
Put the cous cous in a large bowl and let it cool completely.
Drain tuna, break it up with a fork and add it to the cous cous.
Chop pistachios roughly.
Finally season the cold cous cous with two tablespoons of oil, salt and freshly ground black pepper.
