EGGPLANT au GRATIN
- 1 eggplant / aubergine
- breadcrumbs
- 2 table spoons of parmesan cheese
- parsley
- 1 table spoon of capers in salt
- 1 clove of garlic
- salt
- extra virgin olive oil
DIRECTIONS
Preheat the oven to 180°.
Wash the eggplant and cut it into round slices of equal thickness.
Heat a cast-iron grill pan and then lay the slices on it. Grill on both sides.
Grease a baking pan with oil and spread some breadcrumbs on it.
Put the grilled eggplant slices in the baking pan.
Wash the capers with abundant cold water, dry them and mince with parsley and garlic.
Put this mixture in a small bowl together with 2 table spoons of breadcrumbs and the parmesan cheese. Mix.
Scatter this mixture over the eggplant slices and drizzle with oil.
Bake for 12 minutes in the preheated oven, then turn the oven to grill for 3 minutes until golden brown.
Serve the eggplant au gratin hot or warm.
