RICOTTA CHEESE AND CHOCOLATE CUPS
INGREDIENTS (for two cups)
- 250 g ricotta cheese
- 20 g powdered sugar
- 1 organic orange (zest and juice)
- 40 g dark chocolate
- 10 morning coffee biscuits or tea biscuits
- brandy or rum (optional)
DIRECTIONS
Chop chocolate with a knife. Set aside.
Wash the orange thoroughly and zest it. Remove just the very outer layer of skin (you can use a zester or a grater). Set aside.
Slice the orange in half and squeeze it (you can use a plain or an electric juicer).
Filter the orange juice with a fine mesh stainer.
Add a tablespoon of rum or brandy to the filtered orange juice (optional).
Break the biscuits into small pieces, but do not powder them (you can use a rolling pin, the back of a spoon or a meat tenderizer). Put them in a bowl.
Pour the orange juice over the biscuits and gently mix with a spoon. Set aside.
Put the ricotta cheese and the sugar in a bowl.
Beat them with an electric whisk for a couple of minutes, then add the orange zest (set aside a little bit of it for the final decoration).
Mix with a spoon to combine all the ingredients.
Now…the final step!
Put two teaspoons of biscuits in the base of each serving cup. Cover them with a layer of ricotta cream, then sprinkle some chopped chocolate over the cream.
Add a second layer of bisuits; cover with ricotta cream and sprinkle other chopped chocolate.
To finish, decorate each cup with the zest previously set aside.
Store the chocolate cups in the fridge until ready to serve.
