Coconut apple cake: a great alternative to the classic apple cake, with an exotic taste which is irresistible!!! The recipe which inspired me it’s Melybea’s one. I just had to modify it a little bit in order to satisfy my family’s tastes.
To guarantee how wonderfully delicious it is, I can tell you that we gave 1/4 of cake to my granpa. He should share it with my aunt and uncle… well, he didn’t, because it was so good that he ate it before he could even share it with them! 😀
Coconut apple cake
Ingredients (24-26 cm cake tin):
- 50 g melted butter
- 100 g sugar
- 2 eggs
- 300 ml milk
- 150 g flour
- 4 Tsp shredded coconut
- 8 g baking powder
- apples (as much as you want – I used 3 Golden apples)
- sugar q.s. for the surface
- shredded coconut q.s. to decorate
Whisk together the melted butter with sugar until it becomes creamy. Then add in the eggs and beat until it will be light and fluffy.
Whisk together the remaining dry ingredients and add the mixture to the eggs. Continue beating and alternate adding the dry ingredients and the milk.
Pour the batter in a cake tin lined with parchment paper. Add the sliced apples and put them on the cake’s surface. Sprinkle the apples with some sugar.
Let the coconut apple cake bake in the preheated oven at 160° for about 50 minutes.
Let it cool completely before serving and decorate with some shredded coconut.
