Would you like to get your children to eat vegetables??? So try these vegetable rostis!!! They taste great. Besides….it’s a very quick and easy recipe.

VEGETABLE ROSTIS
INGREDIENTS
- 2 medium potatoes
- 1 courgette (zucchini)
- 1 carrot
- 2 medium eggs
- fine sea salt
- olive oil
METHOD
First you have to peel the potatoes, wash them and dry well; then grate them into a bowl using a large hole grater.
Discard the ends from the courgette and peel the carrot. Cut them into julienne strips.
In a large bowl, toss all the vegetables together using two forks.
Break the eggs into a small bowl and season with a generous pinch of salt. Lightly beat the yolks and whites with a fork (it’s important not to over-mix them).
Combine the eggs and the vegetables in a bowl.
Lightly oil a non-stick pan and heat it.
Using a large kitchen spoon, put a spoonful of the mixture on the hot surface and shape it into rounds (if you cook 3 or 4 rostis at a time, space them a little apart).
When the underside is crisp and golden, turn the vegetable rostis over and cook the other side. They will need 2/3 minutes on each side.
Serve the vegetable rostis warm.
