Ingredienti per 4 persone: 3 petti di pollo, 1 zucchina, 1 peperone rosso, 1/2 peperone giallo, 1/2 carota grattugiata,1 cipollotto, 1 spicchio d’aglio, 70 gr. di olive miste tagliate a rondelle, 60 gr. di mais, prezzemolo tritato, sale e pepe, olio evo qb. Preparazione: Lavate e asciugate bene i petti di pollo, e tagliateli a striscette un pò spesse in lunghezza. Mettete la carne in una padella con 2 cucchiai di olio e fate dorare leggermente per 5 minuti. Prendete un’altra padella, scaldate 3-4 cucchiai di olio e fate rosolare l’aglio. Togliete l’aglio e aggiungete i peperoni tagliati a listarelle, fate appassire per qualche minuto, quindi unite ai peperoni le zucchine tagliate a rondelle, la carota grattugiata e il cipollotto, fate cuocere le verdure ancora per qualche minuto. Aggiungete il prezzemolo, le olive, il mais, il pepe e aggiustate di sale. Versate tutte le verdure nella padella con la carne e mantecate bene. Versate su un piatto da portata e servite.
