My carrot almond muffins with chocolate drops are something similar to a kids’ snack called “Camille”. If you go in Italy, you will find it in every supermarket. They are simple carrot muffins with orange juice. My muffins are made without orange juice but with delicious chocolate drops in it!
In order to create this recipe, I started from another recipe which I posted here some time ago: the carrot almond cake.
I would like to point out to you that these carrot almond muffins with chocolate drops are made without using butter or any other oil.
Carrot almond muffins with chocolate drops
Ingredients (serves 22-23):
300 g grated carrots
300 g almond flour
150 g sugar
4 eggs
80 g flour
1 pinch of salt
1 packet of baking powder
chocolate drops
Procedure:
Mix the egg yolks with the sugar. Combine the grated carrots, almond flour, salt, flour and chocolate drops.
Beat egg whites, add them to the mixture and then add the baking powder.
Pour the mixture in a muffin bake tin.
Bake at 170° for 20 minutes.
