The Ortisei apple cake is a cake filled with a lot of apples. Why this name? Ortisei is a town in South Tyrol, Italy, and this region is famous for its delicious apples. The recipe is from a cook nun quite well-known in Italy: Suor Germana.
Ortisei apple cake
Ingredients (28 cm cake pan):
- 125 g sugar
- 3 egg yolks
- 200 g all purpose flour
- 16 g baking powder
- 100 g melted butter
- 50 ml milk
- 3 egg whites
- 750 g yellow apples
- 50 g raisins
Procedure:
Beat the egg yolks with the sugar until they are light and fluffy. Then add the melted butter and the flour, which zou previously sifted together with the baking powder. Pour the milk and mix well.
Beat the egg whites until stiff and add them carefully to the mixture prepared, being careful not to deflate the batter.
Grease and flour a cake pan and pour in the bottom half of the mixture. Cover the entire base with the apples cut into about 1/2 cm slices and the raisins (soaked and squeezed).
Cover the apples with the remaining batter.
Bake in preheated oven at 170° for about 45 minutes. Do the toothpick test before removing from the oven!
Allow the Ortisei apple cake to cool completely before serving.
