La pasta fresca all’uovo, in Sicilia , e’fatta solo con farina di grano duro rimacinato e uova. Nessuna aggiunta di acqua. Dalla ricetta base si possono ricavare tagliatelle, pappardelle, qualunque formato si desideri.
