Potato and Salmon Croquettes

Ingredients:

8 small potatoes
200 g salmon
1 egg
1 small onion
breadcrumbs
salt & olive oil

Procedure:

Boil the potatoes for 30-40 minutes, then peel and mash them.

Cook the salmon in boiling water for about ten minutes, then cut it finely with a knife.

In a bowl, mix the mashed potatoes with salmon, onion, salt, egg and a tablespoon of breadcrumbs.

Form discs of dough and dip them into the breadcrumbs. Put the potato croquettes and salmon on a sheet of baking paper, pour a drop of olive oil on each and bake at 180° for 20 minutes. Halfway through cooking time, turn the croquettes and continue until they are completely cooked.
