Il colore giallo viene dato dall’aggiunta dello zafferano nell’acqua di cottura che darà un sapore particolare al piatto.

Questi gnocchetti sono un’idea originale per preparare un primo piatto particolare e appetitoso, ma piuttosto veloce da realizzare. L’impasto di questi gnocchi contiene patate ma si possono fare anche con solo farina, ingredienti che lo rendono ricco e saporito e allo stesso tempo delicato. Questi particolari gnocchi zafferano con verdura e pancetta affumicata, conditi con ragù di verdure, sono unici nel loro genere e sono perfetti per colpire piacevolmente i vostri commensali.

Ingredienti:

  • 1 kg di patate a pasta bianca
  • 300 gr di farina
  • 1 cipolla
  • 2 carote
  • 2 gambi di sedano
  • 2 zucchine
  • 60 gr di pancetta affumicata
  • 4 cucchiai di olio d’oliva
  • 1 bicchiere di vino bianco
  • 2 bustine di zafferano
  • 1 foglia d’alloro
  • sale e pepe

  1. Lessate la patate in acqua non salata contando 30 min da quando inizia a bollire, fatele intiepidire e sbucciatele, poi schiacciatele.
  2. Unite 250 g di farina  il sale e impastate, formate gli gnocchi, spolverateli di farina e lasciateli riposare.
  3. Tritate la cipolla e tagliate a dadini le carote,il sedano, le zucchine e la pancetta; fate rosolare il tutto con l’olio e l’alloro per 10 minuti, poi bagnate con il vino, proseguite la cotture per altri 20 minuti e infine salate e pepate a piacere.

  5. Fate bollire l’acqua, salatela e aggiungete lo zafferano, versate gli gnocchi e lessateli per qualche minuto scolandoli mano a mano che vengono a galla; condite con il ragù e servite.

I have walked Rome, climbed to the top of the Vatican, seen Milan, Venice, the Cinque Terre, climbed mountains, walked The Path of the Gods, wandered the great city of Napoli, lived on the little Island of Ponza and gathered a pile of friends, family and photographs as well as invalueable experience along the way. I became a new immigrant to the U.S.A on December 15th, 2013. With the support of many great friends and a passion (bordering on obsession), I am here in search of the American Dream and to bring you the natural flavours and vibrant colours of Italy. All my pasta, gnocchi and biscotti are made by hand just as I saw Italians do in homes and good restaurants all over Italy, every day and sometimes, twice a day.
