Ingredienti per la cottura

Preparazione
1) Pulite i carciofi, eliminate tutte le foglie esterne più dure e tagliate il carciofo per 3/4 della sua altezza, eliminate la barbetta, tagliate i gambi e pulite, inserite i carciofi e i gambi puliti in una ciotola con acqua e succo di limone.
2) Preparate il ripieno: sgocciolate il tonno e inserite in una ciotola, tagliate la scamorza a cubetti, il prezzemolo trasferite nella ciotola del tonno, inserite i capperi dissalati, il parmigiano, il pane macinato, regolate di sale, amalgamate il tutto.
3) A questo punto togliete i carciofi dall’acqua e fate scolare, allargate l’interno dei carciofi e riempite, trasferite nella pentola a pressione insieme ai gambi.
4) Inserite 1 bicchiere di acqua, 2 cucchiai di olio. Chiudete la pentola a pressione, mettetela sul fuoco a fiamma alta, all’inizio del sibilio abbassate la fiamma e cuocete per 20 minuti.

1 glass of water
2 tablespoons Extra virgin olive oil
1) Clean the artichokes, remove all the hard outer leaves and cut the artichoke 3/4 of its height, remove the beard, cut the stems and clean, place the clean artichokes and stems in a bowl with water and lemon juice .
2) Prepare the filling: drain the tuna and place in a bowl, cut the scamorza cheese into small cubes, the parsley transferred to the tuna bowl, add the desalted capers, the Parmesan, the ground bread, season with salt, mix everything together.
3) At this point remove the artichokes from the water and drain, spread the inside of the artichokes and fill them, transfer them to the pressure cooker together with the stems.
4) Insert 1 glass of water, 2 tablespoons of oil. Close the pressure cooker, put it on the stove over high heat, at the beginning of the hissing, lower the heat and cook for 20 minutes.
