You don’t wrong, I’m going to make a vegan omelette! No eggs, for sure, but it’s almost the same thing. The most important ingredient is cheap, easy and gluten free: chickpeas flour. This is just the umpteenth proof that it’s so simple go vegan. we could create a cruelty free option for everything we want to. I’ve already made this one with fried potatoes and this one (in spring) with asparagus and cherry tomatoes. The same procedure of this with different ingredients.
Well, today I’m just going to make a “clean out the fridge” recipe because you could use every kind of vegetables you have in it, as I did. I used peas, carrots, edamame soy and the last tomatoes. Even about the form you have to do to your omelet. you could make a French omelette (folded in on itself) or round, turning it with a plate. This is a recipe that everybody could love, vegan or not, even children would do.

VEGAN OMELET WITH VEGETABLES
Ingredients for 4 people:
- 1,9 cup (150 gr) chickpeas flour
- (1+1/3 cup) 300 ml water (always the double of the flour!)
- Vegetables you like: edamame soy, peas, carrots, tomatoes
- Herbs and spices: paprika, chives, rosemary, sage, turmeric, salt and black pepper
- Olive oil to fry
Procedimento:
You have to make the “batter”: sift the flour and mix water with a whisk. Add herbs and spices you like.
Aggiungete i pomodori all’ultimo, sopra la frittata.
Cook vegetables in a frying pan or in a steam cooker. add a bit of olive oil in the frying pan and add the batter over your vegetables. Cook it for a few minutes and turn on the other side or fold it in on itself.
