- 500 g green beans
- 1 onion
- 1/2 lemon juice
- 2 tablespoons parsley
- 4 tablespoons olive oil
- 2 egg yolks
- salt

Fricassee of green beans recipe, a tasty dish, easy, in a short time!
If you prepare this recipe with fresh green beans you must clean them.
Eliminate the ends of the green beans, and pull the wire leathery, which is the thread along the pod. If the beans are tender, the wire is almost non-existent.
Now you can cook the beans, after washing and draining them.
If, instead, you use frozen green beans, proceed with cooking without thawing. In this case the preparation time is reduced.
Cook the green beans in boiling salted water for 10 minutes; drain well.
Chop finely the onion and saute. Add the green beans and cook, in a covered pot, for a few minutes.
Add some hot water and cook, in a covered pot and over medium-low heat, for about 15 minutes. Add more hot water if necessary.
When the beans are cooked, beat the egg yolks with the lemon juice, salt and pour over the beans.
Stir, turn off the heat and sprinkle with finely chopped parsley.
Serve the fricassee of green beans warm!
Note
The cooking time depends on the green beans, fresh or frozen. You can check the cooking stabbing a bean with a fork and when it is tender, the beans are cooked.
