When i decide to do something, usually i do everything i can to realize it, so let’s continue with the translation of my recipes in english. The recipe i want to suggest you today is: Pasta alla norma, i don’t think that there is another way to call it, and probably you have already heard this name before becouse it is very famous! To do this you just need eggplants and a particular cheese whose name is cacioricotta. It’s a kind of ricotta, but harder, with harder i mean matured, seasoned.
- 3 small eggplants (or 1 big)
- 1 onion
- 1jar of tomato’s sauce
- fresh basil
- 200 gr pasta
Let’s do it!
Let’s start washing and cutting eggplants in small slices, next you have to fry them in some oil (usually we use oilseed).
After that, dry them with some absorbent paper to remove the surplus oil, then cut them in slim strips, having care of leaving some slices to garnish your dish.
At this point you can start to cook pasta as you usually do.
In another pot ( thifferent from the pot in which you are cooking pasta) you can start to cook tomato’s sauce with the cutted onion, then add the eggplant and some leaves of basil.
When pasta will be ready, drain it and mix it with the sauce. Finally you can put it in the dishes adding flakes of cacioricotta, slices of eggplant and basil.
