Creamy pappardelle with eggplants

I’m sorry if i am in late for my second english recipe! I have just decided to try to translate each category starting from the one with first courses. The recipe of the day is this particular pappardelle that i cooked becouse i had to use the eggplants before they  became old, so let’s have a look at the ingredients!

Ingredients:

  • Ingredienti: for 2
  • 250 gr  pappardelle
  • 1 eggplant
  • 60 gr mascarpone cheese
  • oil
  • water
  • red pepper

Let’s do it!

First of all you have to cut the eggplant in small pieces, next you have to cook them in a frying pan with some oil and water. It’s better to put the cover on the pan, in this way water will not vaporze so soon; meantime you have to cook pasta and strain it al dente, keeping some water you used to cook it.

At this point, put pasta in the pan with eggplant, add mascarpone cheese and some water in this way mascarpone cheese will be melted and you will have a certain kind of cream that will wrap up your pasta, finally put some red pepper.

Creamy pappardelle with eggplants is ready to be put in the dishes!
