Rabbit with herbs

The rabbit with herbs is a simple dish, easy to prepare, but very tasty. The cooking is quite long, but the result is great! Rabbit meat is very tender and very tasty.

Ingredients

  • 1 rabbit about 1 kg
  • 1 cup vinegar
  • 1 cup olive oil
  • red wine
  • 3 cloves  garlic
  • 3 onions
  • 1 teaspoon thyme
  • 1 teaspoon oregano
  • 1 teaspoon of rosemary
  • salt, pepper

Cut the rabbit into pieces. Place rabbit in bowl with enough water to cover. Add 1 cup of vinegar and leave it for a few hours before cooking.

Wash the rabbit and let it drain.

Pour the olive oil in a pan, heat slightly, add the garlic cloves, crushed, and the onions, peeled and cut into four pieces.

Sauté for a few minutes, then add the rabbit and cook for about ten minutes, stirring.
Add herbs, salt, pepper and red wine, almost to cover the rabbit.

Cover and cook over medium-low heat for 1  and 1 / 2-2 hours, stirring occasionally. If at the end of cooking the sauce is too liquid, cook over medium heat and uncovered  until it dries.
Your rabbit with herbs is ready!
