- 1 rabbit about 1 kg
- 1 cup vinegar
- 1 cup olive oil
- red wine
- 3 cloves garlic
- 3 onions
- 1 teaspoon thyme
- 1 teaspoon oregano
- 1 teaspoon of rosemary
- salt, pepper

Cut the rabbit into pieces. Place rabbit in bowl with enough water to cover. Add 1 cup of vinegar and leave it for a few hours before cooking.
Pour the olive oil in a pan, heat slightly, add the garlic cloves, crushed, and the onions, peeled and cut into four pieces.
Sauté for a few minutes, then add the rabbit and cook for about ten minutes, stirring.
Add herbs, salt, pepper and red wine, almost to cover the rabbit.
Cover and cook over medium-low heat for 1 and 1 / 2-2 hours, stirring occasionally. If at the end of cooking the sauce is too liquid, cook over medium heat and uncovered until it dries.
