Dried fava beans Cretan recipe, fava beans are seasoned with plenty of olive oil, onion and oregano or mint.
The fava beans are rich in vegetable protein and fiber, but low in fat. They contain vitamins and minerals, in particular a good amount of iron. The fava beans are, therefore, a healthy food as well as tasty.

- 400 g dried peeled fava beans
- olive oil
- 1/2 onion
- oregano or mint
- salt

Let the fava beans soak in cold water for 12 hours. Usually we let them soak during the night, to cook the next morning.
Drain fava beans, rinse them with cold water and cook, over medium-high heat, in a pot with plenty of water.
When the fava beans begin to boil skim the foam that rises to the top, using a skimmer.
Cook for 1 hour and 15 minutes-1 hour and 1/2. If you like fava beans creamy like a purèe, cook for 2 hours.
Drain fava beans and put them in a blender, if you prefer them as a purèe. Otherwise you can leave them whole.
Season the dried fava beans with salt, olive oil (I use abuntant olive), finely chopped onion and oregano or mint.
