Chocolate ricotta tart, a tender and crispy tart with a soft ricotta and cocoa cream. A delicious tart, perfect for a snack, or served as dessert after a meal with family or friends.

Ingredients
for the pastry
- 250 g flour
- 100 g butter
- 2 eggs
- 5 tablespoons sugar
- 1/2 tablespoon baking powder
- 1 lemon grated rind
for the filling
- 500 g ricotta
- 1 egg
- 3 tablespoons sugar
- 2 tablespoons cocoa
- cognac
Preparation
Chocolate ricotta tart, easy and quick to prepare, is a delicious tart that everyone will enjoy.
Start preparing the pastry.
Mix the flour with the eggs in a bowl , add sugar, melted butter, (but not hot), the baking powder and grated lemon rind.
Mix well and roll the pastry in a buttered round, 28 cm, baking pan.
Roll the pastry by hand, trying to distribute the dough evenly and leaving around a raised edge of 1.5 cm.
Prepare the filling by combining ricotta, sugar, cocoa powder, egg and some cognac.
Mix well until you have a smooth cream.
Pour the cream on the pastry.
Bake in a preheated oven, at 180 ° C (356° F), for 30 minutes.
Let cool before removing the chocolate ricotta tart from the tart pan to place it on a serving dish.
Keep the tart in the refrigerator, in an airtight container for 3-4 days.
Return the tart to room temperature before serving.
