Torta Smemorina: the only cake recipe you will always remember

Who doesn’t remember the Fairy Godmother in the Cinderella’s Movie? The pudgy old lady was a funny~scattered brain one for sure!

In the Italian version of the movie, her name was FATA SMEMORINA ( Forgetful Good Witch).

In the movie the Fairy Godmother misplaces her magic wand, leading to a series of mishaps, but in the end all is well because it’s a Cartoon, of course.

Fun Fact: the Fairy Godmother character was based on a real person: Mary Alice O’Connor a philanthropist wife of one of Walt Disney’s legendary Execs. To this day a lot of institutions in Los Angeles carry her name.

Back to the cake: why am I mentioning all this? Because the recipe of this delicious cake is perfect for those who cannot remember any dessert by heart and are a little Scatter brained in the kitchen. In fact, all you have to memorize is a short list of ingredients and the number 3. (This cake is also called the cake of 3s, in some other parts of Italy with a slightly different list of ingredients)

After you make it a couple of times, you will see what I mean. Like many pound cakes, it tastes better the day after it’s baked.

Torta Smemorina Scatterbrained



300 g Flour

300 g Sugar

300 g Ricotta cheese

3 Eggs

30 g Milk

30 g Vegetable Oil

3 t baking powder

3 t vanilla extract or orange zest

3 T mini chocolate chips

a pinch of salt

Pre heat oven to 350F static. Butter and coat with breadcrumbs a Bundt pan or any pan you like. Set aside.

Beat eggs with a pinch of salt, add oil and milk. Set aside. Mix dry ingredients, set aside.

In a large bowl, work the ricotta with the sugar until creamy, add eggs mix.

Keep working the batter until no lumps remain. Add the flour and dry ingredients and fold them in with a spatula.

Pour the batter into the prepared pan and bake for 45 min to an hour . Test with a skewer for doneness. It should look golden, lightly cracked and shiny on the surface.

Cool before slicing, or better, wrap it in foil and let it sit overnight.
