This recipe is so simple, a child (or a caveman) could do it.
The only thing is : plan ahead!
My biggest problem in the execution of this dish is remembering to prep the batter.
Trust me, a few minutes of your time at night, will be rewarded in the morning….you will know how, as soon as you take a bite at these!

Go ahead, make the big batch, these waffles freeze well. However, leftovers might not be a thing at all.
OVERNIGHT WAFFLES
(this recipe makes a batch for a family of 4, but one can cut it in half)
Ingredients:
7 C oats, quick
7 C milk (soy or nut. Recently I try to avoid Almond because of what the bees go through. I find OAT milk very delicious!!)
1/3 C coconut oil or avocado oil. (the avocado oil is especially great if you make them savory)
1 to 2 t salt (yes, I taste it!)
and now, for the creativity part, you could add:
1 T Vanilla
Zest of an Orange or lemon
Cocoa, Matcha tea, Cinnamon.. just taste it and go with your preferences.
Directions:
Mix the ingredients in the order given.
Let stand, covered and refrigerated, overnight.
Let sit at room temperature for 30 min.in the morning.
Have waffle iron piping hot.
Bake 5 to 6 minutes until the crust developes, or they will brake.
Note: do not dilute, batter will be thick.
Top with your favorite: chocolate shavings, maple syrup, butter, nuts…
FOR GF but NOT VEGANS
I recommend to top them with Avocado, fresh tomato, possibly cheese and an over easy egg, tons of Arugula. Exquisite!
