Pasta with tuna and lemon
Ingredients for 2 people
- 160 g pasta (spaghetti or penne)
- 80 g canned tuna in olive oil
- 1 small lemon
- 1/4 onion
- parsley
- extra virgin olive oil
- red pepper (optional)
- salt
Preparation
Put a pan full of salad water on the stove and wait for it boils then put the pasta and cook it for 10 minutes (time is specific for each shape of pasta, so look on the package). In the meanwhile, in a non-stick pan, put the finely chopped onion with a bit of extra virgin olive oil, the red pepper (but if you do not prefer you can omit it) and let it heat for few minutes then add the drip tuna and the lemon juice. Mesh them with a wooden spoon and the add the parsely that you have washed and finely minced before. When pasta is cooked, keep 1 ladle of cooking water and add it in the pan, then strain the pasta and add it to the tuna and pan-fry it together for some minutes. Pasta with tuna and lemon should be served immediately but it is good as well if you serve it cold.
