Ingredients

  • 140 g bread flour

  • 20 g all-purpose flour

  • 80 g sugar

  • 80 ml spice syrup

  • 150 g pumpkin puree

  • 1 big egg

  • 70 g maize oil

  • 4 g baking powder

  • 2 g baking soda

  • 3 g salt

  • 100 g raisins

Method

  • Allow the raisins to soak in water overnight or until they plump up.
  • Combine the flours and baking powder by sifting them together.
  • Mix with the paddle attachment on medium speed for 5-8 minutes the pumpkin purèe, sugar, egg, spice syrup, baking soda and salt.
  • Add the oil gradually while mixing.
  • Add the sifted dry ingredients all at once and mix.
  • Add the raisins.
  • Put the batter in a fat coated loaf pan and bake at 180°C, until a tester inserted near the center of the bread comes out clean.
