140 g bread flour
20 g all-purpose flour
80 g sugar
80 ml spice syrup
150 g pumpkin puree
1 big egg
70 g maize oil
4 g baking powder
2 g baking soda
3 g salt
100 g raisins
Method
- Allow the raisins to soak in water overnight or until they plump up.
- Combine the flours and baking powder by sifting them together.
- Mix with the paddle attachment on medium speed for 5-8 minutes the pumpkin purèe, sugar, egg, spice syrup, baking soda and salt.
- Add the oil gradually while mixing.
- Add the sifted dry ingredients all at once and mix.
- Add the raisins.
- Put the batter in a fat coated loaf pan and bake at 180°C, until a tester inserted near the center of the bread comes out clean.
