Old bread – either homemade or ciabatta – can become a delicious paesant big bruschetta with tomato! This is the recipe for “paesant big bruschetta” (in Italian “bruschettone”) because I suggest you use a big slice of homemade bread and “paesant” because when I was little, I used to go to the countryside with my father and I tasted the best tomatoes when they were picked by the farmer’s hands. That man would offer me his sun-baked tomato, proud to let me taste it, and I will never forget that taste!

Ingredients of Paesant big bruschetta
Old bread
evo oil
1 oblong red tomato each
salt
oregano
to taste a clove of garlic (if you prefer garlic powder)
Steps
Dice – after washing – the tomatoes. Season with salt, plenty of oil and oregano. If you like at this point, add a sprinkling of garlic powder. Leave to rest, shaking to allow flavour.
Take a slice of homemade bread and toast it on a non-stick frying pan or in the toaster oven. Those who are lucky can put it in a wood-fired oven! 😀
At this point those who wish can rub a clove of garlic on the slice of bread (if they have not already put garlic powder in the tomatoes).
Season the bruschetta with the tomato, add salt to taste and enjoy!
