Hi guys! S. Valentine’s day is really close and here I am today to show you how to prepare delicious Choco-Coconut Truffles which you can give as a homemade gift to your partner.
Made of a crumbled chocolate cake mixed with mascarpone cheese (or cream cheese) plus dark chocolate and whipping cream. Delicious as the ones you can find in patisserie, maybe even better. Really tasty choco-balls rolled in coconut powder. You’ll love them!
So let’s start making
Choco-Coconut Truffles
Ingredients:
4 eggs
125 g sugar
200 g flour
50 g cocoa powder
2 small glasses of seeds oil
16 g baking powder
250 g mascarpone (or cream cheese)
100 g dark chocolate
2 coffe cup of whipping cream
100 g coconut powder
Method:
- In a bowl beat the eggs with 125 g of sugar, add cocoa powder and seeds oil and continue mixing. Now add flour, stir and finally add baking powder mixed with milk at room temperature. Stir these ingredients then put the dough into a baking pan of about 23 cm of diameter first covered with baking paper. Cook at 180°C for about 35 minutes.
- When the cake gets cool, crumble it with your hands in a bowl.
- At this point heat the dark chocolate together with whipping cream at very low heat and stir till you obtain a chocolate cream. Turn off the heat and add the chocolate cream to the cheese and 2 tablespoons of white sugar. Stir and mix well.
- Now knead the crumbled cake and the chocolate-cheese cream with your hands till you obtain a compact dough.
- Give the dough the shape of little balls by using your hands then roll them into the coconut powder.
- Put the truffles into small fluted paper cases and let them rest in the fridge.
