Hootenanny Pancakes

Men: 599 cals; 27g fat; 55g carb; 36g protein

Pancakes

½ tablespoon coconut oil

4 egg whites

1 whole egg

½ cup Kodiak Cakes pancake mix

½ cup unsweetened almond milk

¼ teaspoon sea salt

¼ teaspoon pure vanilla extract

Toppings:

¼ cup sliced strawberries (½ cup for men)

1 tablespoon heavy whipping cream (2 tablespoons for men)

½ tablespoon pure maple syrup (1 tablespoon for men)

  • Preheat oven to 425 degrees. Spray an 8 x 8-inch baking pan with cooking spray. Place the coconut oil in the pan and put in the oven to melt.
  • Place all the other ingredients except the toppings in a blender and blend for 5 minutes (do not skip this step!).
  • Pull the pan out of the oven and pour the blended mixture into the melted coconut oil. Return the pan to oven and bake for 20 minutes.
  • Top with strawberries, cream, and syrup. Enjoy!!
