Eggplant’s sandwich

Who says that sandwiches are made only with bread? For sure, they did not try the eggplant’s sandwich, a simple and fast recipe that will amaze your family and friends! Here is the recipe and the step-by-step video-tutorial.

Ingredients for two persons:

  • 1 eggplant

  • 2 slices of ham

  • 1/2 slice of cheese (provolone)

  • flour

  • 1 egg

  • bread crumbs

  • fry oil

  • black pepper

  • salt

For the sauce:

  • 1 clove of garlic

  • 2 leaves of basil

  • 5 cherry tomatoes

  • extra virgin olive oil

  • black pepper

  • salt

Procedure for one sandwich:

Cut three slices of eggplant in a row. Take the second slice (the one in the middle) and remove the internal part, forming a ring. Salt the first and the third slices. Join toghether the fist and the second slices. Cut the cheese in small cubes and put in the cavity it toghether with the ham. Close with the third slice and press in order to compact the sandwich. Whisk one egg in a bowl with salt and pepper. Dip the sandwich first in the wisked egg, then in the flour. Remove the excess of flour and repeat the procedure, this time using the bread crumbs instead of flour.

Deep fry the sandwich in hot fry oil. It will be ready when the extrenal surface is golden and crispy. Remove the oil excess with a foil of kitchen paper before serving.

Procedure for the sauce:

Cut the tomatoes in dices and put them in a bowl. Add the basil, the extra virgin olive oil, the garlic clove (without the internal part), salt and pepper. Stir the mixture, allow it to stand for 10 min and then wisk it. Keep tghe mixture in the fridge foe 5 min before serving.

Tips:

  • You can vary the stuffig ingredients according to your taste and your creativity! However, avoid the use of very humid ingredients that could release water during the fring procedure, causing dangerous oil splashes.

  • Serve the accompanying sauce separately from the sandwich.
