This Mushrooms and Tomatoes Gratin is a delicious side dish. easy to prepare, perfect for the whole family and for those who prefer a healthy cuisine, maybe also vegetarian or vegan it is a must!
Mushrooms and Tomatoes Gratin, Ingredients
- 250 g of chestnut mushrooms or the ones you more prefer
- 250 g of vine ripe tomatoes
- a couple of stale rolls, half stale baguette or 4 slices of stale white bread
- 1 clove of garlic
- 1 sprig of parsley
- 2 tablespoons of grated Parmesan od Grana cheese (optional)
- salt and pepper
- Evo Oil
Wash the tomatoes and clean the mushrooms, removing the stems and put them aside.
Slice the mushrooms and tomatoes into thick slices (1/2 inch), I prefer to cut the mushrooms in small circles.
Prepare the mixture for the gratin, by putting in the bowl of a food processor, the stale bread cut into cubes, parsley, garlic, the stems of the mushrooms, Parmesan cheese, a pinch of salt and pepper if you like.
Grease a baking dish and make a layer with the mushrooms, season with salt and cover with a layer of tomatoes, season with salt again, cover with the bread mixture and drizzle with a little EVO Oil.
Bake in pre-heated oven at 190C/375F/Gas Mark 5 for half an hour or until golden brown.
Serve your Mushrooms and Tomatoes Gratin hot or cold, it will be equally tasty.
