Homemade Oreos

Cookies

6 tablespoons whole-wheat flour

2 tablespoons chocolate protein powder

1 tablespoon cocoa powder

Dash of sea salt

2 tablespoons melted coconut oil

3 tablespoons pure maple syrup

1 whole egg

¼ teaspoon pure vanilla extract

Cream Filling

Makes 4 cookies

¼ cup full-fat whipped cream cheese

2 tablespoons vanilla protein powder

¼ teaspoon pure vanilla extract

½ tablespoon pure maple syrup

  • Preheat oven to 325 degrees. Line a baking sheet with parchment paper. Sift together the flour, chocolate protein powder, cocoa powder, and salt. Set aside.
  • Beat together the melted coconut oil and maple syrup.
  • Add egg and vanilla. Mix. Add dry ingredients to wet ingredients. Mix. Scoop into 1-inch balls and place on baking sheet; this should make 8 cookies. Bake for 7– 9 minutes.
  • Transfer to a cooling rack. Beat together all ingredients for the cream filling.
  • Once cookies are cooled, spoon 1 tablespoon filling onto each of 4 cookies and sandwich with the remaining 4 cookies. Enjoy!
