Questa crostata l’ho fatta senza burro .. come si fa? si sostituisce il burro con la ricotta!!! Ottima alternativa per una buonissima pasta frolla… che io uso spesso ricoperta con le mele ma ovviamente va bene anche con la marmellata.
Quando sono tornata dall’Inghilterra, dove ho assaggiato un buonissimo crumble appena sfornato dalla mia amica, ho avuto questa idea… di utilizzarlo anche per una crostata, ho quindi ricoperto la mia crostata con del crumble croccante… che ne dite? un’alternativa alla solita crostata?! 🙂
Ingredienti per la crostata:
300g di farina
150g di zucchero
150g di ricotta
3 tuorli d’uovo
2 cucchiaini di lievito in polvere
un pizzico di sale
un cucchiaino di vanillina
Mettere la farina in una ciotola e al centro porre la ricotta, le uova, lo zucchero, il lievito e il sale. Iniziate a lavorare (io inizio con una forchetta e poi termino con le mani) prendendo piano piano la farina. Formare una palla, avvolgere nella pellicola e riporre in frigo per almeno 15 minuti.
Ripieno:
Marmellata
oppure
3 mele
q.b. zucchero
q.b. limone
1 cucchiaio di cannella
Tagliare le mele a pezzettini e cuocere con gli altri ingredienti a fuoco dolce per circa 10 minuti. La mela diventerà morbida e perderà l’acqua che renderebbe umida la vostra crostata. Lasciare raffreddare e poi versare sulla crostata (in alternativa ricoprire con della marmellata di vostro gusto).
Crumble:
50 gr burro morbido
30 gr fiocchi d’avena
30 gr farina
50 gr zucchero di canna
25 gr di mandorle in scaglie (in alternativa nocciole tritate)
1 pizzico di cannella
Lavorare tutti gli ingredienti fino ad avere un composto sbricioloso e poi ricoprire la crostata spargendo le “briciole” di crumble.
Infornare a forno caldo (180°) per circa 30/40 minuti (dipende molto da vostro forno quindi almeno la prima volta dopo 20 minuti di cottura verificate già la cottura).
Vi avviso: appena sfornata si diffonderà un profumo nella vostra cucina a cui è impossibile resistere 🙂

I’ve baked this tart without butter… how? Using ricotta cheese instead of butter. Believe me is a great tart. I use it with apples and crumble but of course you can use also only with jam.
I had the idea of putting some crumble on my tart after my visit in UK where I tried the real crumble homemade by my friend.
Ingredients for the tart:
2 plus 1/3 cups flour
1 cup plus ¼ cups sugar
150g ricotta cheese
3 yolks
2 tsp baking powder
1 tsp vanilla
Pinch of salt
Place the flour in a bowl, make a whole in the middle and place the other ingredients. Stard kneading slowing adding the flour on the side. Make a dough, folded it in plastic wrap and refrigerate for about 15 minutes.
Filling:
Jam
Or
3 apples peeled, cored and cut into 1cm/½in pieces
2 -3 tbsp Sugar (It depends how sweet you want it)
1 tsp lemon juice
1 tbsp cinnamon
Put all the ingredients in a saucepan and slowly bring it to boiling. Cook it for some minutes as such the apple gets tender and all the water is vanished. Cool it before you place it on the tart.
Crumble:
¼ cups butter room temperature
1/3 cups oats
¼ cups flour
¼ cups brown sugar
¼ almond halves
1 tsp cinnamon
Preheat the oven to 180C/350F/Gas 4.
Place the flour, oats, almond, cinnamon and sugar in a large bowl and mix well. Taking a few bits of butter at a time rub into the flour mixture. Keep rubbing until the mixture resembles breadcrumbs. Place it on the apples and bake for about 30/40 minutes. Time of baking depends on your oven therefore after 20 minutes please check, tart and crumble will be golden brown when ready.
When ready, your kitchen will have such a nice smell that you won’t resist! 🙂
