Ingredienti: rucola, 100g; noci, 100g (in alternativa potete usare anche le mandorle); olio evo, qb. Potete ovviamente ridurne/aumentare la quantità di rucola, mantenendo queste proporzioni.
Procedimento: Lavare ed asciugare la rucola e frullarla con il minipimer ad immersione aggiungendo man mano olio extravergine a filo. Unire le noci (o le mandorle, o anche un mix delle due) e frullare aggiungendo olio poco alla volta fino a che il pesto raggiunga una consistenza cremosa ed omogenea.
Il pesto di rucola si conserva benissimo in frigo per almeno una settimana se messo in un vasetto e ricoperto di olio.
Opzione non vegana: potete aggiungere a piacere pecorino o parmigiano grattugiati.
Questo pesto è un jolly che si presta a svariati utilizzi: potete condirvi la pasta, il riso, il cous cous..oppure usarlo come salsina di accompagnamento per i vostri secondi piatti.

This rocket pesto was born a bit ‘by chance, because in the fridge I had an amount of rocket left and I could not use it right away. So (as in my kitchen there’s no waste!), why not make rocket pesto and keep it for a few days?
Ingredients: rocket, 100g; nuts, 100g (alternatively you can also use almonds); extra virgin olive oil. You can obviously reduce / increase the amount of rocket and keep the right proportion.
Wash and dry the rocket and blend it gradually adding olive oil. Add walnuts (or almonds, or even a mix of the two) and blend adding oil little by little until pesto reaches a creamy and homogeneous texture.
You can keep the rocket pesto in the fridge for at least a week if you put it in a jar and cover with oil.
This pesto is a wild card: you can season pasta, rice, cous cous..or even use it as a sauce to complete your main dishes.
