Quinoa and Smoked Salmon Burgers

A delicacy, this Quinoa and Smoked Salmon Burgers are absolutely delicious, a viable alternative to the traditional hamburger.

Here, in this house of carnivores, where, according to some, a dish is not complete if it is not full of meats of various kinds, these Quinoa and Smoked Salmon burgers were greeted with enthusiasm and liked very much. Remember that quinoa is not a grain, but a seed, rich in protein and therefore excellent substitute for animal protein. If you prefer a product suitable for coeliacs, replace the normal breadcrumbs with a gluten-free bread crumbs or with a couple of tablespoons of potato flour or rice flour.

Quinoa and Salmon Smoked Burgers, Ingredients for 4 people

• 160 g of quinoa
• 800 ml of water (also check what is written on the package of quinoa)
• 200 g smoked salmon, cut into small pieces
• 4 fresh green onions
• 2 small to medium eggs
• 2 or 3 tablespoons of breadcrumbs
• sale e pepe
• fresh dill if you like it
• seeds oil

Pour the quinoa in a saucepan with the water and a pinch of salt and cook for 10/15 minutes, or according to package instructions: I found that there are seeds of different sizes, so some also need 30 min cooking. 
Once cooked, drain any remaining water and leave it aside to cool.
Once cool, pour the quinoa in a large bowl, add the spring onions, cut into thin slices, some dill, if desired, the eggs and the salmon chopped into small pieces. 

Mix all the ingredients very well, so as to fully absorb the egg, add, only if you feel it needs it, a pinch of salt and pepper.
At this point add the bread crumbs a tablespoon at a time, so as to obtain a fairly compact mixture.

Put 3 spoons of oil in a pan and let it heat, meanwhile form some balls with the mixture and then press them with your hands to obtain the burgers, be careful that the mixture does not crumble, given the nature of quinoa, it is difficult to mix, but once cooked your Quinoa and Smoked Salmon burger will be compact and delicious. 

Arrange burgers in the hot oil and cook for 4 to 5 minutes per side, or until they are golden brown. The important thing is that the oil is not too hot otherwise they burn but not cook inside, remember that you used raw eggs and they need cooking! 

Serve your Quinoa and Smoked Salmon Burgers hot in a burger bun or cold as a snack, they are excellent in both his versions, maybe with some sour cream.
