Aubergine Burger, a wonderful meat free meal for the whole family, they are easy to make, tasty and healthy, shall we try them?
Aubergine Burger Ingredients for 6 burgers:
- 2 large eggplants/aubergines
- 50 grams of Parmesan or Pecorino cheese
- 1 egg or egg white
- parsley
- basil
- 1 small clove of garlic
- stale bread
Put the whole eggplants/aubergines, with skin, in a preheated oven at 190C, until they are cooked.
With a spoon take all the pulp and place it in a colander , squeeze out the excess water and once perfectly drained, place it into a bowl.
Crumble the bread very well (you can also use a food processor) and add it to the eggplant/aubergine pulp, along with the cheese, a sprig of parsley and basil finely chopped and egg or, if you want to make it lighter, just the egg white to bind the mixture.
Add a little salt and pepper and mix well with your hands.
Grease a griddle and let it warm up very well, form your burgers (the dough may be very soft, but do not worry it is ok to be so) and put them on the pan. Cook your aubergine burger until they are golden brown and turn them to cook the other side.
