Coconut Rice Cookies: GlutenFree

Hi guys! Today I’ll show you how to prepare delicious Coconut Rice Cookies for which I used exclusively glutenfree products, so people who suffer of celiac disease can eat them 😀

Here’s the recipe:

Coconut Rice Cookies

Ingredients:

125 g sugar

1 egg

100 g soft butter

250 g glutenfree rice  flour + a little to flour the oven pan and to knead the dough

40 g glutenfree grated coconut + a little to guarnish cookies

1 grated lemon skin

Method:

1 –  Put all the ingredients In a bowl and start melting them, then knead the dough on a flat surface with your hands till it’s omogeneous:

2 – Let the dough rest into the fridge for about 30 minutes then spread it and cut circles over it. Flavor them with coconut this way:

3- Put them on a greased and floured oven pan and cook them for 10 minutes at 180°C until they get golden then Let them get cool before you eat them ^^
