Io voglio spiegarvi come si preparano, poi per il condimento vi lascio liberi di fare come più vi piace. A casa mia comunque si fanno sempre e solo in brodo.
Qui di seguito vi do le dosi per 1 persona, a voi non resta altro che moltiplicare le dosi per il numero dei commensali.
INGREDIENTI (per 1 persona)
1 uovo
50 g di pane grattugiato
40 g di parmigiano o grana padano ben stagionato e grattugiato
sale
noce moscata
scorza di limone grattugiata
Vi servirà inoltre:
uno schiacciapatate
PREPARAZIONE
Impastare insieme pane grattugiato, formaggio, uovo, un pizzico di sale, un pizzico di noce moscata e una grattata di scorza di limone. Si deve ottenere un impasto non eccessivamente duro ma compatto.
Passare l’impasto a piccoli pezzi nello schiacciapatate per ottenere dei “vermicelli”. Cuocere in brodo bollente. Questa operazione si può fare anche direttamente sopra alla pentola con il brodo in ebollizione. I passatelli appena buttati sono già pronti e si possono quindi servire subito.

“Passatelli” (traditional italian recipe)
This is a traditional dish made with stale bread and Parmesan cheese. It has always been proposed with meat broth, or sometimes with fish broth. Nowadays, passatelli are also eaten dry, especially as a cold summer dish.
I want to explain how to prepare them, then feel free to eat them as you prefer. In my house however we always eat them cooked in meat broth.
Below you will find the doses for 1 person, you just have to multiply the doses for the number of persons.
Ingredients (for 1 person)
1 egg
50 g of fine bread crumbs
40 g of Parmesan or grana padano cheese grated
Salt
nutmeg
grated lemon rind
You will also need:
a potato masher
PREPARATION
Mix together the breadcrumbs, cheese, egg, a pinch of salt, a pinch of nutmeg and a little bit of grated lemon peel.You must obtain a dough that is not too tough but compact.
Pass the dough in small pieces through the potato masher to obtain small “worms”. Cook in boiling broth. This operation can also be done directly over the pot with the boiling broth. Passatelli just thrown into the broth are already ready and you can then serve immediately.
If you want to eat them dry, collect them immediately with a slotted spoon, let cool and serve as you prefer.
