Vegan coconut and chocolate muffins

Ingredients

  • 130 g all-purpose-flour

  • 85 g sugar

  • 5 g baking powder

  • 45 g coconut flour

  • 1.5 g salt

  • 120 g coconut milk

  • 50 g dark chocolate

  • 8 g cocoa powder

  • 1 egg substitute

PROCEDURA

  • Combine dry ingredients in a large mixing bowl.
  • Add the egg substitute (rehydrated) and stir.
  • Add coconut milk and mix well.
  • Melt the dark chocolate and let it cool slightly before adding it to the mixture and stir.
  • Fill 2/3 of the muffin cups.
  • Bake about 20 minutes (180°C).
