Almond milk- gel with cherry compote

A fluid silky summer dessert for almond milk lovers. The cherry compote gives a little acidity to balance the sweet taste of the almond milk gel.

  • Almond milk gel
  • 400 g almond milk

  • 60 g white sugar

  • 0,5 g salt

  • 2 teaspoons agar agar

  • 1 teaspoon cinnamon powder

  • Cherry compote
  • 200 g cherries

  • 1 teaspoon brown sugar

  • 1 table spoon water


  • Almond milk gel
  • Mix together all the ingredients and bring to boil over a low heat.
  • Boil for 3 minutes, then pour into a bowl and allow to cool.
  • Put the gel in a blender and bland for 30 seconds. Pour the almond milk gel into little jars.
  • Cherry compote
  • Wash the cherries and remove th e kernels, then cut them in two halves.
  • In a little pan mix the cherries, the sugar and the water. Bring to boil.
  • Boil for 5 minutes until the cherries appear wilted and the liquid a deep red.
  • Once cooled, add the compote on the top of hte almong gel in each jar.
