Risotto with saffron and sausage

Risotto with saffron and sausage is a typical Italian dish, easy to prepare. If you like rice, then you have to taste risotto with saffron that is typical of Milan. This kind of dish, the risotto, is easy and also fast to prepare as you do not have to wait for the water to boil, in fact you can cook everything in one pot. For me this is amazing, I always have very short lunch break. Let’s see the recipe.

Risotto with saffron and sausage

Ingredients for 2 people

  • 180 g of rice for risotti
  • 150 g sausage (pork or beef)
  • 1/2 onion
  • 1 saffron sachet (3-4 g)
  • 2 table spoon of grated Parmesan cheese
  • 1 vegetable stock cube
  • 30 g butter

Recipe risotto with saffron and sausage

Preparation

In a saucepan melt the butter with the ​​onion sliced very finely, let it brown and add the crumbled sausage. Brown the sausage for 5 minutes then add the rice and let it roast. Add the vegetable stock cube and hot water little by little in order to allow the rice to cook, remember to stir it very often. If you prefer, you can prepare a broth in another saucepan and add it to the rice. When the rice is almost cooked (2-3minutes to the end) add in grated Parmesan cheese, then add the saffron powder, stirring often so that all the rice becomes yellow (the typical color of the saffron).
Serve very hot risotto with saffron and sausage, and in order to give it a better taste, blend the sausage with the white wine.

Note: if you don’t like sausage or you are vegetarian you can omit the sausage 🙂
