- 200 gfarina nera
- 200 gfarina forte
- 320 gacqua fredda
- 1 cucchiainomiele
- 10 gsale fino
- 10 golio extravergine d’oliva
- 5 glievito di birra fresco
- q.b.semola rimacinata di grano duro
English version:
- 200 gblack flour
- 200 gstrong flour
- 320 gcold water
- honey (1 tsp)
- 10 gsalt
- 10 gextra virgin olive oil
- 5 gfresh brewer’s yeast
- semolina (q.s.)

But remember to follow also these tips:
– Make folds every 20, 15, 10, and 5 minutes, leaving the dough to rest in the fridge;
– Since the dough is very soft, use the spatula to fold the dough from the bottom upwards;
– In the 3rd and 4th fold use your hands, remembering to wet them slightly to avoid the dough sticking on your hands.
– After the last fold, transfer the dough into a bit oiled deep bowl, cover with its lid (preferably) or a plastic film and let it rise slowly in the fridge for about 20 hours.
– The day after remove the bowl from the fridge and let it warm up at room temperature for about 2 hours;
– After 2 hours pour the dough on the semolina flour and make another fold, in order to re-strengthen it. Let it rise again for another 2 hours at room temperature (or in a warm place);
-After that pour the dough again on the semolina flour and use your fingertips to make holes in the dough and stretch it gently;
– Let it rest on the baking tray for at least another 20 minutes.
– Preheat the oven at maximum (250°C) and cook the pizza in this way:
1. cook the naked pizza for 5 minutes, putting it at the bottom of your oven;
2. then at the middle for another 5 minutes;
3. Remove from the oven and season the pizza to taste;
4. Place it again at the top of the oven and cook for another 5 minutes turning the oven in the grill mode.
