- 400 gTrighetto pasta
- 100 gzucchini flowers
- 120 gjowl
- q.b.pecorino romano
- salt (q.s.)

PROCEDIMENTO 〜 DIRECTIONS:
Per prima cosa mettere l’acqua a bollire in una casseruola.
In un pentolino rosolare il guanciale a fuoco medio, mescolando occasionalmente.
In una wok saltare quasi tutti i fiori di zucca (eccetto quattro pezzi), prima accuratamente lavati e puliti. Dopodiché vuotarli in un barattolo con poca acqua di cottura e frullare con un minipimer.
In una ciotola grattugiare il pecorino molto finemente, dopodiché aggiungere pepe e un mestolo di acqua di cottura, amalgamare fino a creare una crema densissima. Aggiungere i fiori mixati al pecorino e mescoliamo il tutto.
Versare il guanciale nella wok.
Salare molto poco l’acqua e buttare la pasta, cuocerla 2 minuti in meno di quanto indicato sulla confezione, scolarla direttamente nella wok.
Nel pentolino dov’era il guanciale aggiungiamo i 4 fiori di zucca precedentemente lasciati da parte e li saltiamo rendendoli croccantii.
Scolare la pasta nella wok, aggiungere quindi la crema di pecorino ai fiori di zucca e l’acqua di cottura poco per volta, far saltare la pasta assieme alla crema amalgamando il tutto.
Servire la pasta spolverizzandola con del pepe nero, un filo di olio evo a crudo e culminare con il fiore croccante. Gustare.

First boil the water in a saucepan.
In a small pan, brown the bacon over medium heat, stirring occasionally.
In a wok, sauté almost all the zucchini flowers (except four pieces), which previously were carefully washed and cleaned.
Then pour them into a jar with some cooking water and blend with an immersion blender.
In a bowl, grate the cheese very finely, then add pepper and a ladle of cooking water, combine until creating a very thick cream.
Add the mixed flowers to the pecorino cream and combine.
Pour the bacon into the wok.
Salt the water very little and throw the pasta, cook it 2 minutes less than indicated on the package and drain it directly into the wok.
In the small pan add the previously-left-aside zucchini flowers and toss them until crunchy.
Drain the pasta in the wok, add the pecorino and zucchini flowers cream and the cooking water a ladle at a time, so toss the pasta together with the cream, combining everything.
Serve the dish sprinkling it with black pepper and a drizzle of extra virgin olive oil, finish with the crunchy flower.
