- 250 gBarbabietola rossa (precotta)
- q.b.Farina 00
- 315 gRicotta
- 65 gGrana Padano DOP (grattugiato)
- 1/2 cucchiainoSale
- 1 pizzicoNoce moscata
INGREDIENTS:
- 250 gRed beet (precooked)
- 00 flour (q.s.)
- 315 gRicotta
- 65 gGrana Padano DOP (cheese)
- Salt (1/2 tsp )
- Nutmeg (A pinch of)
PROCEDIMENTO 〜 DIRECTIONS:
In un frullatore frullare la barbabietola.
Trasferire la barbabietola in una ciotola e aggiungere sale, grana, ricotta, e combinare gli ingredienti.
Trasferire il contenuto della ciotola su un piano da lavoro, unire poi la farina poco per volta, lavorarlo fino ad ottenere un panetto uniforme e facile da stendere.
Dividere l’impasto e formare gli gnocchi.
Cuocere in acqua bollente fino a quando non salgono a galla (1-2 min ca).
Condire a piacere.
Consiglio di gustarli del burro chiarificato, salvia e ricotta affumicata.

Transfer the ingredients to a work surface and then add the flour a little by little, working it until a homogeneous and easy-to-spread dough is obtained.
Divide the dough and form the gnocchi.
Cook in boiling water until they rise to the surface (1-2 min approx).
Season to taste.
I recommend to taste them with clarified butter, sage and smoked ricotta cheese.
