CONCHIGLIA DI PANE 〜 SHELL-SHAPED BREAD

INGREDIENTI:

  • 740 gfarina 00
  • 50 gzucchero
  • 16 gsale
  • 188 gacqua (calda)
  • 3uova
  • 65 golio extravergine d’oliva (+ q.b. per la stesura)
  • 238 glievito madre
  • q.b.latte (per spennellare)
  • q.b.semi di papavero (per spolverizzare, opzionale)

INGREDIENTS:

  • 740 g00 flour
  • 50 gsugar
  • 16 gsalt
  • 188 gwater (warm)
  • 3eggs
  • 65 golive oil (+ q.s. for rolling )
  • 238 gsourdough
  • milk (q.s. for brushing)
  • poppy seeds (for sprinkling, optional)

PROCEDIMENTO 〜 DIRECTIONS:

GIORNO 1:
Nella ciotola della planetaria far sciogliere il lievito con acqua calda e uova.
Aggiungere quindi farina, zucchero, sale, olio ed impastare per circa 5 minuti (fino alla creazione di un impasto liscio e morbido).

Prendere una ciotola di vetro e oliarla leggermente, trasferire l’impasto al suo interno e formare un panetto, ricoprire con pellicola trasparente e lasciare a riposo per 10 minuti.

Passati i 10 minuti riprendere la ciotola: andremo a fare le pieghe di rinforzo tirando le estremità dell’impasto verso l’esterno e ripiegandole poi all’interno dell’impasto stesso, lasciare poi a riposare per 10 minuti e ripetere l’operazione altre 3 volte.

Coprire con pellicola trasparente e riporre in frigorifero fino alla mattina seguente.

GIORNO 2:
Riprendere l’impasto e lasciarlo riscaldare a temperatura ambiente.

Dopodiché ungere leggermente il piano di lavoro su cui lavoreremo l’impasto dandogli la forma di un serpente dal centro rigonfio e dalle estremità più sottili.
Rotolare quindi l’impatto formando una chiocciola, cercando di fissando le estremità.

Sistemare la chiocciola all’interno di una pentola dai bordi alti e coprirla con il coperchio lasciandola lievitare per 3-4 ore.

Spennellare il pane con il latte e spolverizzarlo con i semi di papavero.

Infornare in forno preriscaldato a 200°C per 30 minuti coperto (con il coperchio) e altri 30-35 scoperto.

Togliere dal forno e lasciare raffreddare su una gratella.

Servire e gustare a piacere.



DAY 1:
In the mixer bowl, dissolve the yeast with hot water and eggs. 
Then add flour, sugar, salt, oil and knead for about 5 minutes (until a smooth and soft dough is created). 

Take a glass bowl and grease it lightly with oil, transfer the dough inside it and form a loaf, cover with cling film and leave to rest for 10 minutes. 

After 10 minutes take the bowl back: we will make the reinforcement folds by pulling the ends of the dough towards the outside and then folding them back inside the dough itself, so leave it to rest for 10 minutes and repeat the operation 3 more times. 

Cover with plastic film and refrigerate until the following morning. 

DAY 2:
Take the dough again and let it warm up to room temperature. 

Lightly grease the work surface on which we will work the dough giving it a snake shape having a bulging center and thinner ends. 

Then roll the snake forming a shell, trying to attach the ends. 

Place the shell inside a pot with high sides, cover it with a lid leaving it to rise for 3-4 hours. 

Brush the bread with some milk and sprinkle it with poppy seeds. 
Bake in a preheated oven at 200 °C for 30 minutes covered (with the lid) and another 30-35 min uncovered. 

Remove from the oven and leave to cool on a wire rack. 

Serve and taste as desired.
