This recipe for zucchini and eggs is the one my mom used to cook. A simple and tasty main dish, quick and easy to prepare. Perfect for a light summer meal.
Zucchini and eggs

Ingredients

- 500 g zucchini
- 5 eggs
- 4-6 tablespoons olive oil
- 1 onion
- salt, pepper

Eliminate the ends of the zucchini, wash them well and dry.
Cut the zucchini in slices thick about half cm.
Peel a small onion, and cut it into thin slices.
Heat the olive oil in a nonstick saucepan and saute the onion.
Add the zucchini and let flavor, stirring. Add salt and cook, with the saucepan covered, over medium-low heat, for 10-15 minutes.
Beat eggs, add salt and pepper and add to zucchini. Cook the eggs, stirring.
Serve the zucchini and eggs warm!
