  • 350 g rice
  • 200 g wild asparagus
  • 1 onion
  • 20 g butter+1 tablespoon butter
  • 5 tablespoons olive oil
  • broth
  • 1/2 cup white wine
  • 2 tablespoons grated Parmesan cheese
  • salt

Wild asparagus risotto recipe, delicious, easy and fast!

Clean the asparagus, throwing the white part of the stems and cut the hardest part of them, keeping aside; Prepare the broth by boiling the hardest parts of the asparagus in 1 liter of water. Add salt when the water starts boiling and let  boil  for 20 minutes, over medium heat.

Wash the asparagus and cut into pieces.

Melt the butter in a saucepan, add the olive oil, add the onion, peeled and finely chopped, and asparagus; cook for about ten minutes, over low heat, stirring often.

Add the rice and when it is translucent, moisten with white wine and let evaporate.

Start adding hot broth and cook the rice, over low heat and covered container, for about 20 miniuti. Add more hot broth every time it has been absorbed.

After the cooking time add 1 tablespoon butter, 2 tablespoons of grated Parmesan cheese, salt if necessary, stir and let the risotto on the fire for 2 more minutes.

Serve wild asparagus risotto hot!


Of course you can season the risotto with the amount of grated parmesan cheese you like, or with grana padano cheese.

You can also prepare the risotto with home-made vegetable broth or ready vegetable broth.
