- 250 g strawberries
- 1 tablespoon sugar
- 120 g Pavesini biscuits
for the cheese mixture
- 3 eggs
- 3 tablespoons sugar
- 500 g mascarpone cheese

Wash the strawberries and cut them into small pieces. Place the cut strawberries in a bowl, add 1 tablespoon of sugar, stir and let stand for 1 hour.
Separate the egg whites from the yolks, put the yolks in a bowl and beat with 3 tablespoons of sugar. Whip the egg whites and add them to the egg yolks mixing gently and always in the same direction to avoid removing the compound. Add mascarpone, stirring gently.
Blend 50 g of strawberries with the juice which have issued in the bowl and 1/4 cup of water.
Soak pavesini in strawberry juice and line them in a single layer in the bottom of a baking dish.
Spread over pavesini a layer of mascarpone mixture, leveling it well. Arrange some pieces of strawberries over the mascarpone mixture.
Repeat layering with pavesini, mascarpone mixture and strawberries.
Cover with a last layer of pavesini and mascarpone mixture.
Your strawberry tiramisu is ready!
You can decorate the surface with strawberries!
Keep strawberry tiramisu for a few hours in the refrigerator before serving.
