Strawberry soufflè is a delicious dessert, you can prepare in spring, the season in which we find fresh strawberries.
Strawberry soufflè

Ingredients

- 90 g flour
- 300 ml milk
- 180 g strawberries
- 60 g sugar
- 30 g vanilla sugar
- 5 eggs

Wash the strawberries, place in food processor or blender and puree well. Then sift strawberries puree.
Pour milk in a saucepan, add flour and heat stirring.
Add strawberries puree and the two types of sugar.
Cook, stirring, over low heat, until you get a thick cream.
At this point turn off the heat and add the 5 egg yolks, previously beaten.
Beat the egg whites to a state of stiff peaks and mix into the custard, stirring gently from bottom to top.
Pour the mixture into souffle dishes, brushed with butter, being careful not to exceed two thirds of height.
Bake in preheated oven at 170° C (340° F) for 15 minutes. When the soufflè forms a golden brown crust, remove from oven and serve immediately.
- To beat the egg whites to a state of stiff peaks, you can add a pinch of salt.
- Never open the oven, especially until souffle has not grown.
